A few Amateur differences are... You fight four 3 minute round bouts. There is not a winner of each round. The points are recorded at the end of each round to show how your fighter is progressing in the fight. The grand total of points are tallied at the end of the fight & the winner with the highest number of punches landed will be declared the winner. However... There is a mercy rule. You can lose a bout by TKO if your fighter is getting hit too much. I think the point spread is +15 before a bout is halted & declared a mismatch.
FYI... Power punches landed & jabs landed each count as 1 point. You can not win the fight by having more knock downs or stuns than your opponent. You are not awarded more points for a knock down or a stun. The final decision of the fight is decided solely by total number of punches landed.

Probably important to note the agility bonus in Amateur region. "Judges are more stringent about scoring a punch. Each fighter's agility is multiplied by 5 for purposes of determining how many punches are scores." So, a 1 point advantage in agility (after style bonuses? or before?) is actually a 5-point advantage. Since it's only part of the punches landed formula, I don't think you receive 5-times the style bonus for using the ring or the ropes.

Also, to note, there are plenty of kp-style fighters in the Amateur region, but they are (or should only be) allout fighters. Its pointless, in terms of scoring, to stun or knockdown your opponent in a round unless you get the knockout.

Generally, fight plans are very basic; you don't worry about things like endurance conditionals, cuts, damage done, etc.
Some may track stuns but since the name of the game in amateurs is mainly outpoint, outpoint and lead to a flash, or flash.
You basically have 3 main fighter types:
1. Sissy
2. Sissy/KP
3. Flasher
A basic fight plan for a Sissy/KP against a similar build may look something like this (I'll insert stars to explain the tactic)
1)14/1/5 (outside)
#Outpoint and outscore, drag the opponent into a desperate situation
2)if score > 1 then 6h/10/4 (allout)
if score < 1 then 15/1/4 (outside)
if score = 0 then 6h/10/4 (allout)
#You get up on point and flash or you go for a higher aggression. Note that this depends on what you opponent has done previously. Obviously, if your opponent normally flashes when he's down, you'll throw in a 5h/10/5 (counter) or something similar to catch it, and so on.
Basically, the fight plans go that route. It's a cat and mouse game and a lot is luck sometimes.
Quick tip: speed is the name of the game in keeping you competitive and conditioning will be low.
